The Grange is a boutique winery producing 100% estate grown and made wines. It has a beautiful tasting room housed in a historic barn with lovely grounds to explore. Caroline Granger built the winery project from the ground up on her family farm. Growing seven varieties of grapes on 60 acres of vines, it is the largest estate vineyard in Prince Edward County. By Chadsey's Cairns Vineyard is named after one of the region's first settlers, Ira Chadsey. It was he who erected the stone mounds (called "cairns") that can still be seen, in part, behind the farm. History tells us that he would have done this to have a landmark in the afterlife when he came back to life in the skin of a white horse.

Today, the vineyard is an iconic reference in the County.

We grow the grapes we make our wines with:
100% genuine Prince Edward County wines.

These wines are all made from traditional and refined grape varieties: chardonnay and pinot noir, worthy of the great tables; ever popular riesling and gewurztraminer (often with a touch of noble rot); refreshing black gamay, bistro style; and other rare grape varieties such as the very fragrant Muscat Ottonel, the mineral-rich Chenin Blanc, and the Saint-Laurent particularly generous in blackberries.

Pioneers in wine

Like all good Prince Edward County wine stories, ours starts off with a hint of madness.

In 1995, Richard Johnston (former NDP MP for Scarborough West and former President of Centennial College who held so many positions it would take too long to list them here) accepted a job with the Mohawks of Tyendinaga. His wife, Vida Zalnieriunas, then a psychotherapist, insisted that they settle in the county: she was keen on living in the countryside, near rivers, bucolic landscapes and artists.

So they bought a 200 year old farm, which had 4 barns as well as a most charming red brick building called "La cidrerie", the construction of which dates back to 1850, when there were orchards in abundance.

During a walk on a gray November day in their new estate, Richard and Vida stop to contemplate the cornfield behind the cider house, which is of particular importance to them: it is precisely here that their children (born in the city) had taken pleasure in losing themselves in the dense rows of ears of corn, on the famous summer day when they met real estate agent Chuck Slik (a name that cannot be invented: in English, the adjective slick designates someone with more than one trick up their sleeve!) who sold them the property that day! But at the time of their walk, there was only 6 acres of thatch left of the field ...

So Richard, inspired by his beautiful memories of walks in stony vineyards in France, and no doubt also by his love of wine, exclaims: “I think we could plant vines here! "(Even a psychotherapist can have difficulty controlling an imbalance ...)

To which his wife replied: "Are you crazy?" - logical question for Vida when one thinks of her training. "Do you have any idea of ​​the enormous amount of work that such a project would require?" (Richard could certainly implement social policies, but what does this man who works in the Legislative Assembly of Ontario know about viticulture? The County is a region that has never done it before? subject of wine trials, after all!)

It does not matter: after 3 years of relentless lobbying, Richard obtains (finally - and with great difficulty!) Support for the acquisition of 3,000 Riesling vines, saying to himself (a fine fox that he is!): " You might as well make it big! "

The spring of 1999 enjoys an exceptional climate…. except May 7, when 30 family and friends have to hand plant vines on an area as large as a football field. They may be dressed in a bright yellow raincoat, but you can hardly see them through the haze and cold drizzle. These novices have the distinct impression of reliving the times of their ancestors: kneeling in the mud, digging holes with a sore back, in rows of earth stretching out as far as the eye can see like a nightmare that never ends. no more.

OUR WINES

In our small artisanal winery, we use our expertise to produce wines made from grapes from the vines of our vineyard, suitable for cool climates. These classic fine wines are produced 100% on the property, in small batches and in barrels. To do this, we employ various processes: some of them are new while others are even older than our historical domain.

To capture the most heady aromas and the most penetrating flavors, we work first and foremost to pick the best grapes possible after having carefully tended the vines by hand throughout a long season. 

Riesling 2017 $ 23.20

It is not a dry Riesling, but its liveliness with citrus notes with a slight residual sweetness gives it a special place in the dry white category. Its floral aromas and its underlying crunchiness add to its complexity. A good, refreshing and complete table wine. Also very appreciable to sip as an aperitif. You choose ! Since this is a slightly more acidic riesling, it can cut through thick creams and fatty dishes, just as well as encountering acidic foods, such as citrus or tomato based dishes. . It can also cool you down on a sweltering summer night or rekindle the promise of summer on a cold winter's wake.

Gamay Noir 2019 $ 29.20

A good Gamay is delicious with foods that have a fat content: anything that is cheese, fried or grilled. A medium-bodied red loaded with spicy cherries. Aged in French oak of medium toast. Pairs well with a relaxed atmosphere that requires a bit of palate cleansing and chin wiping. It's even okay to cool a Gamay down slightly on a hot summer day.


3-Point Hitch ( 3 Point Hitch ) 2019 29.20 $

Our red blend creates a link between Gamay Noir, Pinot Noir and you. Notes of blackberries, cherries and toasted oak. Another medium-bodied, fun, bistro-style red that pairs well with deliciously fatty foods. Eminently drinkable. Like a real masterpiece, this traditional French blend combines the brilliance of Gamay with the gravity of Pinot. Named after a revolutionary coupling device for tractors

Pinot Noir 2019 $ 32.20

A classic Comté Pinot that displays a nice interplay between layers of cherry, pepper and earth. From our King Eddie vineyard, the grapes were hand picked and sorted before fermentation in barrels and aging in French oak barrels. Dry, medium bodied and silky. We love it with Atlantic salmon or grilled lamb. Will age well, but it's hard to resist now… A particularly fine vintage.

Trail Estates Winery

A couple weeks ago we estimated 2021’s harvest would be late September. It’s still looking like about that. So, while we wait, here’s what is happening at Trail:

The time before harvest is busy one in the cellar. Wines we hope to bottle this Fall have been removed from barrel and into tank. Fermentation speeds can vary barrel to barrel and so this spreads the yeasts so to speak so they call all finish together. Some may move back to barrel to finish, while others will make their way to glass.

In the vineyard, the fruit is looking amazing! It’s an anxious time as part of you wants to pick all the fruit now. But, there is still ripening to be done and most clusters are still a bit uneven in colour, sweetness and flavour. Birds and bees are more active — a good, but also somewhat frustrating sign!

New Wines Shortly!

New wines currently being bottled are the 2020 ORNG2020 Skin-Fermented Gewürztraminer and soon our 2020 Sauvignon Blanc. Most of these should release sometime in late September to follow the current vintage (the 2020 ORNG is included in the August #WOTM Club!). A bit further out (but tasting delicious) and with an initial release later this fall is our 2017 Pinot Noir Traditional Method Sparkling

Lake on the Mountain Brewery

LAKE ON THE MOUNTAIN BREWING COMPANY

In 2007 we opened a small onsite brewery at our resort and began brewing two styles of beer, ‘Cream Ale’ and ‘Country Brown’. Due to their popularity, we continued brewing our original two beers but added several different styles to our lineup. Previously these beers were only available at our restaurants ‘The Inn’ and ‘The Miller House’.

In the fall of 2016, we moved our production from the resort to a location just down the road in Glenora (11369 Loyalist Parkway). We now have a larger manufacturing site, a bottle shop, beer garden, and taproom.

Our beers are as always available onsite, at our two restaurants as well as a few other select establishments.

We continue the tradition of small-batch, quality beer production using well-sourced local and international ingredients.

The farm is located in Hillier, Prince Edward County, at the corner of Loyalist Parkway and Station Road...please enter off Station Road and proceed along the road to just before the barn, where parking is available. Follow the signs on foot to the fry stand.

On Saturdays we will also be at the Wellington Farmers Market.

Peruvian Escape Overview 

Peru is a longitudinally-oriented South American country that lies along the Pacific Ocean and is home to rainforest and mountain ranges. Most famous for being the historical land of the Incas, Peru is also home to a coffee industry that produces a gentle, aromatic, and flavorful variety with some mild acidity. The Urubamba and Chanchamayo varieties of coffee are its most famous.

Urubamba grows in the south, near the legendary Inca city Machu Picchu. Chanchamayo, regarded as Peru’s premium variety, grows in the central region of the country, on the western side of the Andes Mountains as they slope down toward the jungle valley of Chanchamayo.

Chanchamayo has a medium body, delightful flavors and aromas, with moderate amounts of acidity. Occasionally it will be light bodied with bright acidity. It’s been described as soft, sweet, smooth, delicate, and well-balanced, having a chocolate, nutty taste and tones of sweet citrus both in terms of aroma and flavor, and also in the aftertaste.

Peru has become well known in the organic coffee trade as well, exporting mellow flavored coffee at competitive prices, often becoming the most affordable organic coffee option in many places. While you’ll find that Peruvian organic coffee is more common and lower priced than other options at stores and roasters, don’t assume that the price marks a lapse in quality, because it doesn’t...to the contrary, it’s an excellent quality mild coffee to add into your pantry.

The environmental conditions of Peru that facilitate its great coffee also have made it a place for solid cocoa growth. The high altitude, tropical climate, and rich soil combine to make a chocolate that is respected and well received around the world, Together, coffee and cocoa make up the number one and two commodities of Peru; they’re such an integral part of its economy and culture, they’re even stamped on certain denominations of currency.

Waupoos Estates Winery

Located on a stunning 100 acre waterfront property, Waupoos Estates Winery was the first winery in Prince Edward County.

The vineyards were first planted in 1993 with an experimental mindset to see what would grow in this area. As the vines continued to thrive, more varieties were planted – Waupoos now has 20 acres of established vineyards growing 18 different varieties. Our wines have placed in national and international wine competitions, with the medal count growing annually.

The wine cellar and retail store were built from the ground up. The building is rich in limestone (hand picked from a quarry in Kingston ON) and officially opened in 2001. Here you can sample our award winning wines, purchase wine and wine-related gifts and don’t forget to visit the chocolate and gelato store.
As the estate matured over time, we built a beautiful restaurant by the water, nestled amongst the vineyards. Our restaurant’s focus is farm to table; we grow produce and raise proteins on the farm to offer the freshest ingredients whenever possible.

THE WINEMAKER

Our award winning winemaker was born and raised in Barrie Ontario. She studied literature abroad in England and general arts in Montreal – the creative process fascinated her which eventually led her to winemaking. At the young age of 20 and on a whim, Amy enrolled at Niagara College for the winery and viticulture program. The gamble was worth it and she fell in love with the craft, and also completed the post grad wine business management program to see the other side of the industry. After her three-year college experience and time working at Reif Estates the opportunity of a lifetime arose. With the help and support of her family and mentor Rob DiDominico she moved to the small town of Picton to embark on this new chapter of head winemaker at Waupoos Estates at the age of 23. Years later Amy continues to produce award winning wines and try new production methods. She also produces award winning cider for the Estate Cider House – Clafeld Fruit Winery and for The 401 Cider Brewery.

The Restaurant

Towards the water’s edge you’ll find The Restaurant at Waupoos Estates, a gazebo-style building nestled amongst vineyards with a panoramic view of Lake Ontario. What started as a humble outdoor eatery has since evolved to entertain guests year-round with (when permitted) both indoor and alfresco dining.

The Restaurant’s food philosophy is simple – use sustainable, fresh ingredients grown on our property for a true Farm-to-Table experience. Our multi-course prefix menus offer a combination of family style and plated courses in a refined yet casual dining experience. We make world-class wine and cheese in Prince Edward County

OUR TASTING ROOM

It is our pleasure to guide you through the Lighthall experience in person. Meet the winemaker and perhaps learn some secrets. Walk the land and absorb the unique elements that make the Estate vineyards, and the entirety of Prince Edward County magnificent.

OUR TECHNIQUES

We use traditional old-world techniques in our winemaking procedures. We are the only winery in The County using a concrete fermentation vessel for our reds – this allows both for typically healthier fermentations as a result of the oxygen penetration into the tank through the porous concrete, as well as temperature moderation by preventing sudden spikes in temperatures as a result of fermentation. We age our wines in French oak barrels exclusively. We also ferment a portion of our wines in these same barrels. We age our wines on the lees, giving a more complex and rounder mouthfeel to the finished wines. 

CHEESE WIZARDRY

In addition to being among Canada's first producers of wine and cheese, we are the first producer in Ontario to be making ours under the same roof as our cellar. We create our cheese with the same principles and high standards as our wine. Buying fresh local sheep milk from one farmer on a weekly basis, we hand-make a to produce brie, washed-rind, blue, pressed manchego, feta cheese, and many more to come. and our rotating cast cheeses are designed to complement our small-batch wines.

Why we’re into this wine:  It’s the contact with grape skins and years spent sur lie, instead of in oak, that brings complexity to this unfiltered white. The chardonnay saw 24 hours of skin contact before fermenting cold with organic yeast. It aged for 18 months on its lees in stainless steel, then aged in-bottle another 18 months with no filtering or fining. It’s a clever, low intervention method of bringing depth and spice to a wine while ensuring it doesn’t see a lick of oak.

What it tastes like: The aromatics are astounding; floral notes of lavender, lilac, and white flowers along with candied pear and lemon drops. The palate is more focused with flavours of tart grapefruit, white pepper and baking spice.

How to drink it: Serve with crab cakes with pepper aioli, crispy chicken with a creamy mushroom sauce, or melted brie with pear preserve.

2019 Still Waters

Why we’re into this wine: It’s a perfect example of the innovative winemaking practices and out-of-the-box thinking that’s emerging in Prince Edward County. Chardonnay and pinot noir grapes were harvested at the same time, saw 24 hours of blended skin contact and were then fermented together with wild yeast. The resulting Still Waters is a low alcohol (10 per cent), unfiltered, equal blend of chardonnay and pinot noir with a striking orange hue and plenty of funk. Produced in a small batch of only 100 cases.

What it tastes like: Green apple, orangeade, strawberry and cantaloupe with green herbs and earth. It’s a  unique and herbaceous wine, but its distinctiveness is rewarding and alluring, and the flavours mingle well on the palate. 

How to drink it: The pleasant acidity in the wine makes it a gem for food pairing; spicy Indian dishes, asparagus risotto, and picnic fare of all kinds will be a treat.

2017 Cabernet Franc

Why we’re into this wine: Long and slow are the keys to this bold wine’s success. The cabernet franc fruit spent 28 days macerating with the skins and was then fermented gradually with organic yeast before being pressed gently and delicately to reduce any harshness on the extraction. The wine was aged in French oak barrels for 30 months, then bottled—you guessed it— unfined and unfiltered to retain as much flavour as possible.

What it tastes like: From aromas of raspberry, cassis and violet to notes of earth, green and black pepper, and spice on the palate, this is a powerful red with an enchanting rawness. It’s balanced with medium tannins and a smoky finish.

How to drink it: The savoury, smoky notes in the wine will be complemented and amplified by similar foods such as bacon-wrapped filet mignon, pork fried rice and Spanish paella.

With the Cool Climate Chardonnay Celebration (i4C) happening later this month, we thought it apt to release the 4th vintage of our Estate Chardonnay!

“…It’s all about the County tension — there’s real verve and an electric current running through — as well as the typical limestone twang and equally common salinity and sapidity… Great palate presence and complexity, a mineral lover’s selection to be sure, crystalline and pure.”

Fruit was hand-harvested from our estate vineyard. Pressed whole cluster straight to barrel. Fermented and aged without racking or stirring. Barrels used comprised 25% new oak, 50% 3rd-fill, 25% 4th-fill — all in 500L format. Racked from the barrel in August after 10 months of aging. Racked once in tank prior to bottling September 8th. Bottled unfiltered and unfined with minimal sulfur added. 

This wine shows aromas of sweet hay, bright lemon, and ripe peaches followed by a zippy palate with a beautiful weight and pure county acidity.

A limited number of magnums are also available at the winery.

We began planting in 1999 and now have 25,000 vines over 20 acres. There are 11,000 PInot Noir, 9,000 Chardonnay, 3,000 Pinot Gris and 2,000 Gamay. The current yield, depending on the vintage, is about 3500 cases. All the wines are made using grapes only from our vineyards.

In September the entire vineyard is netted against birds, and an electric fence surrounds the perimeter to keep out the raccoons. After harvest 2-3 canes are laid down on a low wire and dirt is hilled up on them for the winter to ensure a crop. With trial and error we have invented several tractor attachments to make this process as efficient as possible, including de-hilling in the spring.

Harvesting begins as the weather dictates, anywhere from mid-September into October. All the processing is done on site in the barns across the road. The grapes are hand picked and sorted, then crushed and de-stemmed (by machine not feet). Pinot Gris and Chardonnay are left on their skins for 24 hours then pressed out, the Gris goes into stainless steel tanks and Chardonnay is barrel fermented using various ages of wood.

Pinot Noir is left on its skins for up to 10 days in cold-soak maceration. Depending on the vintage, native or cultured yeast is used in fermentation. The wine is pressed, racked and aged in French oak for up to 24 months.

The secret to great wine is healthy, ripe fruit. If you look after the vineyard properly, have a decent growing season, ideally hot and dry, and don’t over crop the vines, you will be rewarded with wine that is loaded with the flavours unique to the region where the grapes are grown. But don’t just take our word for it, go ahead and taste for yourself.

The outdoor pizza oven and patio are now open 7 days a week from 11am to 6pm!

We accept bookings for tables only between 11am and 11:30am (after 11:30 we serve all guests first come, first served). To inquire about reservations please email us through groups@normanhardie.com (we kindly require a minimum of 48 hours notice for bookings). Bookings are for large groups only; couples and small groups need not inquire.

Open early May to October, enjoy our wood-fired thin crust pizza with a glass of wine on our patio overlooking the vineyard.

Our pizza recipe has been developed by top chefs from some of Toronto’s finest restaurants: Pizzeria Libretto, Terroni, and Ortolan.

Not only do we serve the finest wood-oven pizzas, we also serve the freshest oysters from P.E.I., in-house smoked Ontario trout, and warm cast iron olives.


VISIT US

Set in beautiful, rural Prince Edward Country, the winery and estate vineyard are a 2-hour drive from Toronto and about 4-5 hours from OttawaMontreal or upstate New York. With plenty of over-night options at local B&Bs, a trip to the County can make for a wonderful weekend away.
Visitors are welcome to join us at the winery to taste through our wines, have lunch on our patio during the summer, or just say hello. Staff will be at the winery during the day all year round.
