We are a small, high density vineyard and winery in the heart of Prince Edward County.
We produce unfined and unfiltered pinot noir, cabernet franc and chardonnay.
We also make a traditional method sparkling cider from local, golden russet apples. Nice and dry with beautiful, tiny bubbles.

Golden russets are one of only a few apples capable of making single varietal cider. Along with the kingston black, it has near perfect sugar, acid and tannin. The juice has a vinifera-like quality, that during fermentation makes you almost forget it is not from grapes. This is not a cider that tastes oxidized. Indeed, the ripe, full tannins in these apples protected the cider from the yellowing ravages of oxidation. The natural sugar level of these apples was so high that the cider tops the alcohol scale at 9.5%.
Our sparkling apple cider is made with the same level of attention and detail that goes into our pinot noir. The apples, non other than the noble golden russet, were sourced from a nearby apple orchard. They were hand sorted and the cider is méthod traditional, so the second ferment was in bottle. Like our sparkling pinot noir this cider is hand riddled, hand disgorged and topped with a natural cork.

The tour will continue as we visit our underground Barrel Cellar to learn first-hand about the process of fermenting, aging and protecting our wines. Your tour culminates with a visit to our lovely Wine Boutique.

PRINCE EDWARD COUNTY APPELLATION
Officially identified in 2007 as a VQA appellation of origin, Prince Edward County is separated from the mainland by the Bay of Quinte at Belleville and is completely surrounded by the waters of Lake Ontario. The soils and microclimates of the County coupled with the all-pervading limestone base provide an ideal growing environment for cool-climate grapes such as Pinot Noir and Chardonnay. This idyllic island setting is now home to over 40 wineries, a dozen craft breweries, fine restaurants, cheese producers, farmers’ markets and other local food purveyors dotted along the natural beauty of the County trails and beaches.
Terroir
Topography
The topopraphy of Prince Edward County is irregular with deep valleys digging into the broad flat Trenton limestone that is the foundation of this appellation. A gradual rise from north-east to south-west is crossed by a number of long east-west gentle ridges and occasionally steep rugged escarpments.
On the northern and eastern shorelines high rocky bluffs rise to an elevation of a hundred feet or more while the western shore has many inlets with sandy shores and large sand bars which define bodies of water such as West Lake and East Lake.
Prince Edward County is an appellation full of mesoclimates and terroir conditions that provide the basis for the distinct in the wines that are produced here
Soil
Soils throughout this appellation are mostly reddish-brown clay loam to sandy loam that overlay a limestone bedrock embedded with shale fragments. The stony surface and numerous rock and shale fragments within the soils allow water to drain into the limestone, which ensures good drainage of winter-melt and substantial root penetration for mature vines. This rocky soil also allows good heat conduction and retention and encourages early warming in the spring.
Climate
Most vineyards in this appellation are located in areas that receive maximum benefit from lake breezes. Prevailing southwesterly breezes travel steadily across the Bay of Quinte which moderate temperatures throughout the year and are especially beneficial during the warm summer months, keeping average temperatures around 22 degrees C., with pleasant cooling during the hotter days and keeping cool nights at bay.

Offering some of the best wines in Ontario, Keint-he produces domestic wines that exhibit European minerality and acidity. The vines are lovingly raised in the limestone rich soils of our three distinct and unique vineyards. Keint-he only focuses on those grape varietals that most effectively showcase the terroir of the region. The result is award winning, terroir-based wines that reflect our standard for quality and the character of the region in which they were produced.

At Keint-he our goal is to produce domestic Pinot Noir that has international character. Unlike many grape producers, at Keint-he we like to think of our vineyards as a habitat for our vines. Our Pinot grapes prosper in harmony with their environment, not in spite of it. We’ve applied the Burgundian model of viticulture to the County microclimate. That means that the 28 acres of vines that we have planted now, will never exceed 35 acres. We believe in high density planting. Despite the lower yields, the quality of the fruit translates into wine that is interesting, enjoyable and balanced. We keep our fingers on the vineyards pulse by doing all of our work with the vines by hand. This way each vine, cluster and grape gets the hands on attention that is needed to produce the superior fruit required to make superior wine
THE VINEYARDS
Ever aware of the Burgundian vineyards we are trying to emulate, all of our vineyards were selected based on soil type, topography and sun exposure. These subtle differences are partly responsible for creating fruit that results in wine with superior style and quality. For this reason, we have four distinct satellite vineyards, each with their own unique personalities and characteristics.
Big Lake Vineyard: Big Lake vineyard is located at our winery: 49 Hubbs Creek Rd. This vineyard consists of Pinot Noir, Chardonnay and Melone de Bourgogne. The terroir is Brighton gravelly sand and 8′ by 3′ spacing. Fronting on Lake Ontario (a Big Lake), the vines benefit from the cool breeze coming off the lake. Planted in 2007.
Little Creek Vineyard: Little Creek is actually made up of two vineyards separated by a small woods and a creek … Little Creek. Both north and south sections are used to grow Pinot Noir.The terroir is Hillier clay loam with 8′ by 3′ plantings on both northern and southern slopes. The vines at Little Creek are the second oldest planting in Prince Edward County (planted in 1997).
Foxtail Vineyard: Foxtail is home to a number of different grape varietals, including Pinot Noir, Pinot Meunier, Chardonnay, St. Laurent and Pinot Gris. The terroir is Hillier clay loam with 8′ by 3′ spacing. The bulk of these vines were planted in 1999.

Tastings are offered daily in the summer months at our seasonal Tasting Shed located just behind our winery (no appt necessary*) offering outdoor tastings / seating. During low season periods (Jan-Apr / Nov-Dec) tastings are available by appointment in our indoor winery tasting area - please call or email to book a time (drop ins welcome by chance).
*Appointments are not required during high season, but if you’d like to pre-book your visit, please call or email us or fill out our contact page. Our Tasting Shed & indoor winery tasting area can accommodate groups of up to 4 at a time - contact us in advance for larger groups.

WINTER FOOD PROGRAM
Visit us November through April to enjoy our new winter food program. Open daily: Monday-Friday 11am-3pm, Saturday & Sunday 11am-5pm.
Piping hot individual lasagnas, smoked trout, toasted sourdough bread, and fresh PEI oysters are served through the winter. In accordance with provincial regulations, we are currently serving food exclusively outdoors next to roaring fire pits.
We work on a first-come, first-served basis. Our winter food programs offers casual dining service with no reservations required.

The Tasting Bar is currently open daily from 11am to 5pm (November through March), and is open daily from 10am to 6pm April through November. We operate on a first-come, first-served basis. All are welcome, with no reservations required.

A Little Bit Supersonic
Let it snow!
In a lot of ways, this is what we have been waiting for. Snow always adds brightness to the winter cold; we love the crunch under our feet (and replenishes our resevoirs for Spring!).
This week we are releasing a limited amount of 2021 Supersonic Sparkling! We are making 300 bottles available in 6- and 12-packs as a pre-release — just to add a little more colour to winter :)
Grown by Cory and Beverly Lipsitt, this wine is 100% hand harvested and 100% Concord! Pressed on a very long press cycle with lots of rotation to naturally extract juice from these hard-to-press grapes. Bottled with an addition of (pre-fermented) juice for in-bottle fermentation.
This wine has developed a cult following over the last few years and its always fun to compare vintage to vintage. 2021 comes across a bit lighter, no doubt reflecting the rains during harvest. The bubbles are still light to moderate at this point with a faint sweetness still. Keep this wine nearer to room temperature and it will evolve over the next month or two, becoming drier and the bubbles more vigorous.

I am so excited to embark on another year of drinking… ahem… education! This year I am embarking on some new adventures, recovering from a harvest and along with everyone, trying to get through the COVID depression!
The word PIVOT sends shivers down my spine and the thought of cancelling another plan isn’t even worth the emotion of getting upset anymore. Instead of focusing on the bad, I’m writing to you to tell you that there is plenty to be happy with in the wine industry — and we are embarking on a new project! News on the latter soon!
Our first WOTM Club of the season!!!
I find Pét Nats fascinating for their purity — not in a conventional sense, but in a fruit-meets-fermentation-meets-palate-immediately sense. Fermentation can be very complicated when you start considering all the factors that can be controlled and how those factors affect the finished product. This year I’ve paid careful attention to bubbles and trying to keep them in bottle, not on your ceiling! I’m really happy with these and think they bring balance and poise — with a bit of funky purity of course.
Baco is back! This time in sparkling. Light bubbles will get more vigorous (and drier) over time — this is still a young wine. It’s showing lovely notes of berries — blackberries, cherries, strawberry and currants. Finishes with savoury spice and complexity — think beets (slightly meaty), rosehip tea, tarragon and clove.

Visit us November through April to enjoy our new winter food program. Open daily: Monday-Friday 11am-3pm, Saturday & Sunday 11am-4:30pm.
Piping hot individual lasagnas, smoked trout, toasted sourdough bread, and fresh PEI oysters are served through the winter either indoors (proof of vaccination required for indoor dining) or outdoors next to roaring fire pits.
We work on a first-come, first-served basis. Our winter food programs offers casual dining service with no reservations required.

Espresso Overview
Expresso (or espresso) is usually made from Arabica and Robusta Coffee beans. The beans are often dark roasted, and the caffeine content is high. The grinds are meant to be fine, but finding a balance is crucial: too fine results in over-extraction, while too coarse results in watery coffee. Despite the science of its brewing, expresso is actually a versatile drink: some prefer their expresso bold and strong, while others prefer it soft and flavorful.
This mix of beans in the Expresso Fairtrade Blend comes from throughout South America, a unique region that transitions from the arid desert of the Southwest to the humid jungles of South America, and therein, the geography ranges from high mountains to coastal plains. Connecting the two continents of the New World, and positioned between the Pacific Ocean and the Caribbean Seas, Central America is home to famous ancient cultures like the Maya and Aztecs, which have combined with Colonial Spanish history to create a unique Latino cultural fusion. What follows is a brief survey of some of the highlights of Central American coffee.

Costa Rican coffee, which is believed to be one of the best in Central America, is full-bodied with richness, robustness, and crispness. The high altitudes lead to pleasant levels of acidity, and its tastes have been associated with brown sugar, citrus, and apricot-like fruitiness. It’s a highly rated coffee that’s making increasing appearances in reserve and high-quality blends.
Nicaragua is known for smooth-bodied, subtle, and balanced coffee with hints of nuts and vanilla. Unfortunately, civil wars, Cold-war embargos, and natural disasters have severely impacted the trade, but Nicaragua is bouncing back; there are a number of diverse regions producing a variety of tastes and qualities.
Ecuador is most famous for the Galapagos Islands, a mostly-pristine biological wonderland visited by Charles Darwin, but the mainland is home to a medium-bodied coffee with fair amounts of acidity. Belize is not a large exporter of its full-bodied bean, but most of the coffee growing happens on a single 50-acre plantation, the Gullon Jug, under the jungle foliage. El Salvadorian coffees tend to be softer, less acidic, and contain notes of honey, which makes them an excellent choice for smoothing out a blend.
The coffee industries of Honduras, Guatemala, and Mexico are all well established, and the various geographies of these countries, ranging from mountainous to coastal to rainforest, have created a variety of qualities and tastes that are ranked and named after the region of the town of origin.

How does it work?
The Gold Medal Tasting is $388.00 plus tax and tip for up to 4 people.
This include an estate tour conducted by Saxe Brickenden, Partner, or Sherry Karlo, Vintner, while sampling 9 wines and enjoying a dairy free cheese and plant-based charcuterie board on the Vintner’s Deck or in our VIP Wine Lounge (weather dependent).
We start out with our Gold Medal winning 2020 Bubble as our reception wine to walk through our 1805 post and beam hip barn, then tour down through the vineyards to our famous dry stone bridge, one of the largest in North America. Here we enjoy our traveler pack of whites then we bribe you with our best selling Patio Reserve Rosé to stand on the bridge as a group for a photo op. After some time for photos, we retire to the Vintner’s Deck (or Wine Lounge) to enjoy dairy-free cheese and plant-based charcuterie while sampling the portfolio of reds. Afterwards we’ll go back up to the winery to consult for you on your wine purchase while we enjoy a final tasting of our port style wines. Each person who buys 11 bottles of wines will then be given a free bottle.
We require payment upfront. If for some reason you can not attend and cancel your reservation within 24 hours of your tour, you can redeem the equivalent value in wine bottle purchases. If you cancel before 24 hours before the tour, we can offer you a full refund - a $10 per head administration fee. Like other special events, you’ll not need to worry about adding gratuity as 18% will automatically be included on your final bill.
To book, we require your credit card number and your cell phone number to reach you on the day. You can increase your reservation up to a group of 14 up to 48 hours before the tour. Each additional guest is $97.00
Your reservation is not complete until you receive a confirmation email from us. Please do not make a reservation by phone on Fridays or Saturdays as we will be in service.
Plan to be with us for about two hours. This tour is not available on Saturdays. It can be booked weekdays and Sundays at 12:00 noon or at 5:00 pm. Do try to make reservations at least two weeks in advance for best ease of finding a mutually agreeable time in Saxe and Sherry’s schedule.
