2022 Pét Nat - Red
Our Red Pet Nat is back and it’s a wine we have grown to adore. I mean, who doesn’t love red bubbles, especially when farmed and raised with impeccable pedigree? Comprised of 25% Baco Noir, 15% Cabernet Franc — both organically farmed (but not certified) on our Estate Vineyard in PEC and 57% Riesling from the Hughes Vineyard in Niagara — the first Ontario grower to be certified sustainable.
The reds were fermented with wild non-select yeasts via partial carbonic maceration for juicy, bright fruit flavours. As in the last several vintages, Riesling is added for acidity and to balance the earthiness of the reds beautifully. Bottled mid-ferment. Absolutely no adds and not disgorged — exactly as Pet Nat should be!
Wild-Ferment. Unfiltered. Unsulphured. Serve chilled.
“Luscious aromas of red licorice, strawberry, ripe raspberry and dried violets. The palate sings silky, bright notes of red cherry, ruby grapefruit, rhubarb and tomato leaf wrapped in high voltage acidity. Fine tannin. Something new in every sip!
