This new program will be able to help coffee farmers fight back against these fungal outbreaks that have been plaguing coffee plantations on a global scale.

This secret blend from sun-soaked lands yields a medium body that’s become one of our most popular flavors. A portion of proceeds will go towards the Coffee Leaf Rust Awareness Program, which helps coffee growers fight the global pandemic of fungal outbreaks affecting plantations around the world.

Cupping Notes: Hazelnut, Carbon, Cacao Nibs, Green Tea, Hops.

Barista Notes: This standard blend has balanced traits and tastes that will please most consumers, making it a great option for any time of day, although it’s hazelnut hints can facilitate great pairings with baked goods and pastries.

Central and South Overview

Of all the coffee producing regions in the world, Central and South America are closest to the United States and Canada, making their collective countries a leading player in the caffeinated beverage industry of the Anglo-speaking world. Colombia and Brazil are among the leading global producers of coffee, with tropical climates and large mountain ranges that are ideal conditions for growing coffee, and their beans are a staple in a variety of blends, balancing out the flavor and reducing the cost.

South and Central American coffee beans are famous for their light to medium body, balance, and clean taste. They are typically sweet, crisp, and lively, with potential traits of spiciness and sparkle. While these are some of the overarching traits used to describe the Pan-American coffee bean, there is actually a wide range of countries in South and Central America, and each one has its own unique culture, history, climate (or climates), and coffee beans.

The range of countries spans from the Portuguese speaking Brazil, to the Caribbean Islands of Jamaica and Haiti, to countries like Mexico, Peru, and Columbia, where Spanish and Indigenous traditions are blended in the arts, cultures, and foodways, including coffee growth.

Coffee is a main export in many of these countries, and a huge component of the workforce is engaged in coffee harvesting for many parts of the year. While North Americans certainly love their coffee, the act of drinking this hot caffeinated beverage is even more of a cultural institution in the tropical, sun-soaked lands south of the United States.

These diverse climates, altitudes, and soil conditions result in a broad spectrum of tastes and aromas, from chocolate to citrus. Coffee growers are starting to process the coffee cherries as well, and sell them as cascara, a practice that has been gaining traction since 2017. Formerly, these cherries were discarded as waste, but growers have started to capitalize on the lightness, brightness, and hint of jasmine that they can add.

TRAIL ESTATE WINERY

We let nature guide the winemaking process at our Prince Edward County winery. Winemaker Mackenzie Brisbois aims for honesty inside the bottle—whether it be our Skin-Ferment Riesling, Orange Wine, Pét Nat Sparkling, soulfully complex Unfiltered Chardonnay, or barrel-aged varietals. We use wild ferments (indigenous yeasts) and leave many of our artisanal wines whole and unfiltered without the use of additional enzymes or tannins. Each wine tells the story of site and vintage with unabashed honesty and is never the same year-to-year (nor should it be). Each wine should be surprising, textural and soulful; not predictable. We take this credo to heart and hold back a large ratio of past vintages in our library. As each wine ages, the artisanal nature of each wine becomes apparent. Visit our winery’s newly-opened warm, modern tasting space and try for yourself!

We invite you to visit us in the County!

Keeping you Safe at Karlo Estates Winery

POSTED: DECEMBER 2, 2020 AT 11:03 AM / BY TIMES / The Wellington Times was founded in 1992. In 2004 Kathleen Sabyan and Rick Conroy acquired the newspaper. In 2017, Corey Engelsdorfer took over as Publisher. The Times remains one of Ontario’s last independently owned community newspapers.

Karlo Estates brings music indoors

Over the past few months, the outdoor music program at Karlo Estates has proven very popular. Local musicians got an opportunity to play in front of an audience, and patrons were able to listen to live music while enjoying a glass of County wine and some tasty snacks. About two months ago, Sherry Karlo and partner Saxe Brickenden began to think about how they might be able to move the music indoors. On the outdoor stage the musician had to be at least 15 feet away from the audience; indoors the musician would have to play from behind a Plexiglas screen. The inside wine lounge is naturally sectioned into a number of smaller areas, and Karlo and Brickenden realized these could be curtained off to provide some separation between people in different “bubbles”. With the curtains closed, patrons inside need not wear a mask as the room itself is essentially masked. Brickenden had the idea that the Plexiglas-enclosed area be kept at negative pressure, so that any aerosols produced by the musician would be ventilated to a purification system, rather than circulating in the lounge. In a flash of inspiration, Karlo came up with another way to keep everyone safer. “Sherry’s innovation was to treat each area like a hospital room. We want each of the rooms to be autonomous from a ventilation standpoint,” says Brickenden. This meant that each area had to have its own inflow and cold air return, with the musician area having slightly larger ducting to maintain negative pressure. “Nobody’s air is mixing with anyone else’s air, so now you have your own bubble of air that’s being filtered and sterilized and removed,” explains Karlo.

It was a complex and expensive change, with the contractor describing it as a spaghetti of ductwork. “The cold air return goes through the best purification system we’ve got, and one that is widely used in hospitals. There’s ultraviolet and a HEPA filter that exponentially drops the number of potential COVID viruses in the space. This is the new reality. We want to be the safest fun space in the County, so that means we’re going to have to use technology, not just wait for things to change,” says Brickenden. Having a new ventilation system is one thing; ensuring that it does the job is another, and this is where an air quality sensor designed by Alan Majer of AirQ.ca comes in. Majer has been working at the intersection of business and technology after graduating with a Master’s degree in business. He worked for more than a decade in a think tank run by Don Tapscott before starting his own business to look at devices in the home that could be connected to the Internet of things, and then he started making prototype devices for start-up companies. When the COVID-19 pandemic struck, he began to think about how the virus spreads, and he realized that lingering exhaled air could be a good indicator of risk. He first used commercially available carbon dioxide (CO2) sensors to detect exhaled air, but soon realized he had to make his own sensors to detect particles in the air as well. “I had to do a lot of research into what is the relevant particle size. As particles get around under 10 microns, they can stay in the air for minutes or even hours. Our particle sensor measures that 10 micron category, which is really a key factor for spread. The particle sensor does not detect COVID within the air. What it is useful for is understanding how good your filtering system is. You measure the intake of the filtering system and you measure the air it’s putting out and look at the difference. All the data is logged and you can see how it changes with time. The more fresh air you are bringing into a space, the less chance you have stale exhaled air hanging around, and really that’s how COVID spreads, one person breathing in another person’s exhaled air,” says Majer.

Majer’s device is palm sized and a couple of centimetres thick. It continuously measures the air quality in Karlo’s wine lounge and early indications show the new ventilation and purification system is removing almost all the small particles. In addition the UV system kills over 90 per cent of airborne viruses. “You can feel safe here. There’s great quality air and a team looking after you with COVID protocols and great hospitality,” says Karlo. The winery is only advertising to locals, and only using local musicians within the space, factors that are important as COVID-19 cases are very low here. “We want to make sure if we are asking people to come inside, they are in the safest space possible,” says Karlo. As always, there’s no cover charge for music nights in the lounge. Although the lounge has a nominal capacity of 50 people, typically there are no more than 25 in total at any given time. But Karlo and Brickenden are considering ways to give people the Karlo experience at home. “We’re looking at live-streaming the music, so we can share this great Canadian content with our neighbours and with people who can’t come to the County right now. They can order wine online, they can get a curated charcuterie box from us and turn on great Canadian music, and have the Karlo experience from the comfort of their own home,” says Karlo.

Indonesian Sumatra Overview

Sumatra is the largest of the Sundra Islands, a sub-tropical chain that runs along the South Pacific, curving upward toward Southeast Asia, positioned between Australia and the Philippines, and famous for pristine jungle, azure seas, and of course, coffee—in fact, Sumatra is the fourth largest coffee producing region in the world, exporting over a billion pounds of the caffeinated bean, amounting to roughly 65% of the world’s coffee.

Indonesia is an eclectic mix of religions, geographies, and cultures, ranging from jungle tribes nearly untouched by the foreign influences, to modern cities of glass skyscrapers reaching up to the blue sky. Small cooperatives are the typical venues for coffee growth, usually sparsely forested and manned by families that could own farms as small as a hundred trees and a few acres.

The unique flavor of Sumatra coffee is drawn from what is called, in the indigenous Bahasa language, Giling Basha. This wet-hull processing involves removing the coffee seeds from the cherries, resulting in coffee with an earthy and chocolatey flavor.

Due to Sumatra’s humid, tropical, and fickle weather, farmers usually only have a few hours each day to dry the beans before the rain returns, which could ruin all the work of drying them. Coffee beans in most other countries are able to dry to a point of 12% to 15% moisture content, but Sumatran beans are only left to dry until 50% moisture content is reached.

This unusually high percentage of moisture results in some great flavor varieties and facilitates a small degree of fermentation, yielding a lower brightness and less acidity, with muted, earthy tones like wild mushroom, peat moss, herbs, and chocolate.

Once the beans are locally dried, they’re transported to a facility that can wet-hull them, using friction to conclude the drying process and remove the beans from their parchment, or protective coating, resulting in increased fermentation and adding complexity to their earthy flavor, resulting in unique tasting notes that have been compared to expensive scotch.

MacKinnon Brothers Brewing Co.

MacKinnon Brothers Brewing Co. is located on a bicentennial family farm, just outside of Kingston, Ontario. With over 200 years of farming heritage behind us, we use the hops, wheat, and barley grown right here on our farm to brew beer which is emboldened with the unique character of rural Canada. We do this so beer patrons everywhere can share in the taste and tradition of our farm.

https://vimeo.com/212508581

Our ancestors settled in Upper Canada in 1784, and through the generations, built a thriving farm. We decided to add another element into the mix: a farm-based brewery. We’ve renovated century-old barns to house the equipment, and planted hops and malting barley in the surrounding fields. The character and history of this place shines through in every glass.

It’s like school, but better!

We often check in on current and past vintages to evaluate them. Are they like an old friend we want to reconnect with? Or are they turning into that weird teenager? We also add other similar wines as points of comparison. We taste them blind. No bias; all learning. It’s a little something special we are now opening up to Wine Club Members too!

As we are all most fresh and alive first thing in the morning, we taste them then: hence The Breakfast Club!

The Breakfast Club happens on select Tuesday mornings. And there will be breakfast! Euro style: pastries and espresso! Arrive at 10:15 am and the tasting will start promptly at 10:30.

Tuesday, November 24: Chardonnay Verticals — both Foxcroft and Estate Vineyards

This is a very limited tasting, open first to Wine Club Members. RSVP at info@trailestate.com. Limit 4-6 people, max 2ppl/group. Distancing in effect.

We plan on doing this monthly — and with other wines, so please stay tuned for more dates.

Thinking of a Gift Idea?

Why not send the gift of wine? Until December 12th we will be offering free shipping for your gift of two or more bottles. Use the code Gift2020 at checkout. Send to family members you want to have a zoom toast with!

In December, our Wines of the Month Club we feature celebration wines to end 2020 in style. Details shortly, stay tuned!

Harvest 2020

Harvest has officially been underway for about a week, and we are pleased to report it's looking very promising! Our County Pinot Noir has come off very ripe, so while there may not be huge yields, we are looking at some very luscious, concentrated Pinot Noir with excellent depth of colour for 2020. The Chardonnay is up next, and these grapes are the healthiest our Vineyard Manager has seen in several years, so we expect it will be a stellar vintage overall - surely one to remember, for many reasons! We also want to make a huge shout out to our incredible team of vineyard workers, many of them who have been with us for several years. We truly could not do it without them, and this year would have been a completely different story if not for their hard work and dedication.

New Releases

2018 Churchside Pinot Noir

Keith's Notes:The nose expresses the warm 2018 vintage with soft red fruit, floral notes, and beetroot. The palate is big and bold with ripe fruit. Cedar and forest floor shine through as the barrel adds hints of spice, cream, and smoked meat.

2019 K.J. Watson Pinot Gris

Keith's Notes: Florals, white tree fruit, and wet stone explode from the glass. Citrus and melon follow in the mouth with bright, refreshing acidity. A good mouth feel leads to a crisp finish of green papaya and citrus peel.

FLYGTA Toronto - Kingston flights

The eight-passenger King Air craft will begin operation between Toronto and Kingston four days per week in September. Photo by FLYGTA

The City of Kingston and Tourism Kingston announced today that a Toronto-based airline, FLYGTA, will begin offering flights to Kingston this September. FLYGTA’s service between Norman Rogers Airport and Billy Bishop Airport on Toronto Island starts on Thursday, Sept. 10, 2020.

“We are thrilled that our beautiful airport will welcome visitors,” said Megan Knott, Executive Director of Tourism Kingston.

According to Cameron Thomas, spokesperson for FLYGTA, the flights will operate four days per week, with two daily trips on Thursdays and Fridays, and four flights on Saturdays and Sundays. Thomas said fares will range from $39 to $99 to start, during a three-month promotional period. The airline will operate an eight-passenger, King Air craft.

The City is calling it the first step towards potential daily air service down the road. It also fills the gap left behind by Air Canada, which discontinued flights between Toronto and Kingston in June.

Tourism during the COVID-19 pandemic

According to Tourism Kingston, visitors flying into Kingston will be advised of local COVID-19 restrictions, and offered “specialized packages that combine return airfare with accommodations and regional attractions.”

“It is our mission to promote the local tourism industry, but the number one priority of every Canadian at this time is public health,” Knott said. “This is why the City and Tourism Kingston have worked closely with FLYGTA to ensure that every safety measure is in place so that when regional travellers arrive they know what will be expected of them while staying in Kingston.”

Kingston has been in Stage Three of provincial reopening since Friday, Jul 17, 2020, with relatively low local prevalence of COVID-19. The last five locally confirmed cases of COVID-19, dating back to Friday, Jul 24, were connected to travel outside of the area.

Despite the pandemic, CEO of FLYGTA Group Chris Nowrouzi, said he feels this is the right time to introduce service.

“With most of the province in Stage Three and Ontarians looking for additional travel options, we remain dedicated to serving the needs of Kingston and the regional traveller,” he said. “We…hope together we can support the safe return of Canadian tourism.”

Mayor welcomes ‘new opportunities for air travel’

Kingston Mayor Bryan Paterson said he’s thrilled to welcome FLYGTA to Kingston. “This partnership will benefit our city’s economic recovery and provide our residents with a fast and convenient link to Toronto,” he said. “It’s exciting to see how the expansion of our airport is creating new opportunities for air travel to and from Kingston.”

Thomas said the airline’s plan to expand into Kingston predate Air Canada’s exit, and the pandemic.

“Kingston was a main market that we’ve been targeting for a while,” Thomas said. “It’s a great summer market. Lots of great tourism to the Thousand Islands, etc. It’s a short flight, plus you’ve got all the schools and students needing to come and go.”

FLYGTA will also provide Kingstonians with a direct link to the Porter Airlines flight terminal on Toronto Island, and its network of North American destination cities.

Trail Estates Winery - 2020 Harvest

Week One of Harvest is in the Books!

Harvest is here! After what has been an entirely awkward 2020, it was a welcome return to some normalcy!!!

Last week was especially busy, seeing five wines bottled and a truckload of grapes destemmed and pressed. We started with Niagara fruit in the form of Pinot Gris (above) from the PM Team at Redfoot Vineyard, and Muscat from Craig Wismer/Glen Elgin. We finished picking our Geisenheim and Gewürz. onsite.

Bottling began with our 2019 Chardonnay (V4) on Tuesday, 2019 ORNG on Wednesday, plus three forthcoming sparklings, Thursday and Friday! This was the largest crush/bottling crew we’ve ever had! Thanks to our importers Ward et Associés for for bringing their spirit and full Montréal crew, Krysta of the Grape Witches and Brittney of Harvest to Bottle (Check out their IG Blog), Jay, Paul, Derek, Sheri, Heather and of course, Mackenzie (in her first week back)! A big, big Thank You for all your help; it was fun!

Speaking of wine, the 2019 Chardonnay is one of the wines we’ll send out in September’s Wine of the Month Club so members get first dibs on the first bottles. It’s paired with two other 2018 estate reds — 2018 Baco Noir and 2018 Pinot Noir! These wines ship next week, so it’s not to late to sign up :) $125 include all three bottles as well as taxes and shipping!
