A Little Bit Supersonic

Let it snow!

In a lot of ways, this is what we have been waiting for. Snow always adds brightness to the winter cold; we love the crunch under our feet (and replenishes our resevoirs for Spring!).

This week we are releasing a limited amount of 2021 Supersonic Sparkling! We are making 300 bottles available in 6- and 12-packs as a pre-release — just to add a little more colour to winter :)

Grown by Cory and Beverly Lipsitt, this wine is 100% hand harvested and 100% Concord! Pressed on a very long press cycle with lots of rotation to naturally extract juice from these hard-to-press grapes. Bottled with an addition of (pre-fermented) juice for in-bottle fermentation.

This wine has developed a cult following over the last few years and its always fun to compare vintage to vintage. 2021 comes across a bit lighter, no doubt reflecting the rains during harvest. The bubbles are still light to moderate at this point with a faint sweetness still. Keep this wine nearer to room temperature and it will evolve over the next month or two, becoming drier and the bubbles more vigorous.

I am so excited to embark on another year of drinking… ahem… education! This year I am embarking on some new adventures, recovering from a harvest  and along with everyone, trying to get through the COVID depression!

The word PIVOT sends shivers down my spine and the thought of cancelling another plan isn’t even worth the emotion of getting upset anymore. Instead of focusing on the bad, I’m writing to you to tell you that there is plenty to be happy with in the wine industry — and we are embarking on a new project! News on the latter soon!

Our first WOTM Club of the season!!!

I find Pét Nats fascinating for their purity — not in a conventional sense, but in a fruit-meets-fermentation-meets-palate-immediately sense. Fermentation can be very complicated when you start considering all the factors that can be controlled and how those factors affect the finished product. This year I’ve paid careful attention to bubbles and trying to keep them in bottle, not on your ceiling! I’m really happy with these and think they bring balance and poise — with a bit of funky purity of course.

Baco is back! This time in sparkling. Light bubbles will get more vigorous (and drier) over time — this is still a young wine. It’s showing lovely notes of berries — blackberries, cherries, strawberry and currants. Finishes with savoury spice and complexity — think beets (slightly meaty), rosehip tea, tarragon and clove.

WINTER FOOD PROGRAM

Visit us November through April to enjoy our new winter food program. Open daily: Monday-Friday 11am-3pm, Saturday & Sunday 11am-4:30pm.

Piping hot individual lasagnas, smoked trout, toasted sourdough bread, and fresh PEI oysters are served through the winter either indoors (proof of vaccination required for indoor dining) or outdoors next to roaring fire pits.

We work on a first-come, first-served basis. Our winter food programs offers casual dining service with no reservations required.

Despite the science of its brewing, expresso is actually a versatile drink: some prefer their expresso bold and strong, while others prefer it soft and flavorful.

This mix of beans in the Expresso Fairtrade Blend comes from throughout South America, a unique region that transitions from the arid desert of the Southwest to the humid jungles of South America, and therein, the geography ranges from high mountains to coastal plains. Connecting the two continents of the New World, and positioned between the Pacific Ocean and the Caribbean Seas, Central America is home to famous ancient cultures like the Maya and Aztecs, which have combined with Colonial Spanish history to create a unique Latino cultural fusion. What follows is a brief survey of some of the highlights of Central American coffee.

Costa Rican coffee, which is believed to be one of the best in Central America, is full-bodied with richness, robustness, and crispness. It’s a highly rated coffee that’s making increasing appearances in reserve and high-quality blends.

Nicaragua is known for smooth-bodied, subtle, and balanced coffee with hints of nuts and vanilla. Unfortunately, civil wars, Cold-war embargos, and natural disasters have severely impacted the trade, but Nicaragua is bouncing back; there are a number of diverse regions producing a variety of tastes and qualities.

Ecuador is most famous for the Galapagos Islands, a mostly-pristine biological wonderland visited by Charles Darwin, but the mainland is home to a medium-bodied coffee with fair amounts of acidity. Belize is not a large exporter of its full-bodied bean, but most of the coffee growing happens on a single 50-acre plantation, the Gullon Jug, under the jungle foliage. El Salvadorian coffees tend to be softer, less acidic, and contain notes of honey, which makes them an excellent choice for smoothing out a blend.

The coffee industries of Honduras, Guatemala, and Mexico are all well established, and the various geographies of these countries, ranging from mountainous to coastal to rainforest, have created a variety of qualities and tastes that are ranked and named after the region of the town of origin.

Karlo Estates Winery - Gold Medal Tastings

Indulge in our ultimate wine tastings experience for you and up to 13 of your best wine loving friends.

How does it work?

The Gold Medal Tasting is $388.00 plus tax and tip for up to 4 people.

This include an estate tour conducted by Saxe Brickenden, Partner, or Sherry Karlo, Vintner, while sampling 9 wines and enjoying a dairy free cheese and plant-based charcuterie board on the Vintner’s Deck or in our VIP Wine Lounge (weather dependent).

We start out with our Gold Medal winning 2020 Bubble as our reception wine to walk through our 1805 post and beam hip barn, then tour down through the vineyards to our famous dry stone bridge, one of the largest in North America. Here we enjoy our traveler pack of whites then we bribe you with our best selling Patio Reserve Rosé to stand on the bridge as a group for a photo op. After some time for photos, we retire to the Vintner’s Deck (or Wine Lounge) to enjoy dairy-free cheese and plant-based charcuterie while sampling the portfolio of reds. Afterwards we’ll go back up to the winery to consult for you on your wine purchase while we enjoy a final tasting of our port style wines. Each person who buys 11 bottles of wines will then be given a free bottle.

We require payment upfront. If for some reason you can not attend and cancel your reservation within 24 hours of your tour, you can redeem the equivalent value in wine bottle purchases. If you cancel before 24 hours before the tour, we can offer you a full refund - a $10 per head administration fee. Like other special events, you’ll not need to worry about adding gratuity as 18% will automatically be included on your final bill.

To book, we require your credit card number and your cell phone number to reach you on the day. You can increase your reservation up to a group of 14 up to 48 hours before the tour. Each additional guest is $97.00

Your reservation is not complete until you receive a confirmation email from us. Please do not make a reservation by phone on Fridays or Saturdays as we will be in service.

Plan to be with us for about two hours. This tour is not available on Saturdays. It can be booked weekdays and Sundays at 12:00 noon or at 5:00 pm. Do try to make reservations at least two weeks in advance for best ease of finding a mutually agreeable time in Saxe and Sherry’s schedule.

Our favorite Nouveau is back!

Bottled immediately after fermentation is complete, this Nouveau is fresh and unadulterated. Zero sulphur added, no enzymes, etc.

What it is is fresh and alive with acidity but equally lush and vaguely tropical — think honeyed pear, lemon and grapefruit. Texturally some tannins flesh out the palate and refresh in the best way. Eminently quenchable!

72% Riesling, 22% Gewürztraminer, 6% Muscat Ottonel

An eclectic mix of aromatics balanced by the varying lengths of time spent on the skins during fermentation. Pear blossom, grapefruit and clementine are followed by moderate tannins and refreshing acidity. 

Riesling, Gewürztraminer & Muscat from the Hughes and Foxcroft Vineyards: a mixture of skins was added to the top of each tank to create a cap and protect the wine for further ageing. Pressed after a couple weeks of ageing on skins. Racked minimally. Bottled with no sulphur or additives.

Our Cider

Loch Mor Cider blends contain carefully selected heritage and cider varieties, which are pressed on site and fermented slowly at low temperatures. Many of our ciders are bottle conditioned, creating the natural, fine stream of bubbles. Some are fermented naturally with wild/house culture yeast & others are inoculated with strains of wine yeast. 

We like our cider full of flavour and not full of sugar. We leave our cider “full juice”, which means we can provide you with a drier (lower sugar) cider with the full flavour for you to enjoy.

Cider judges also agree – our ciders have won awards for two years in a row, including for our fortified cider, Pommeau, which has won twice. (we were the first to produce this traditional style of cider in Ontario, and we think the second in Canada).

Thank you to all our friends and vineyard workers who came out to our picking party on Saturday. We were able to pick all the Pinot Gris in our Ridge vineyard. It was an incredibly fun and fruitful day.

ALCHEMY ARTIST RESIDENCY

Lisa Wood is a visual artist and Assistant Professor at Ishkaabatens Waasa Gaa Inaabateg, Department of Visual Art at Brandon University. With an MFA from Yale University and a BFA from the University of Manitoba, her art practice focuses on figurative painting and drawing that investigates interpersonal relationships, social exchanges, and the role of food.  Lisa has been the recipient of many awards and scholarships and exhibits her painting and prints nationally and internationally.

While in Prince Edward County this summer, Lisa was partnered with Closson Chase Vineyard. Shadowing four of Closson Chase’s seasonal farm workers from away, she walked up and down the rows of vines with the workers, listening to their stories and taking photos of them through the vines as they worked putting up protective netting. In her responsive art piece, a 5.5' mixed media drawing titled Walking the Vines, Lisa focuses on the workers’ hands in action. While the workers are largely hidden from view by the lush foliage, their contribution to the county and the vineyard is integral and is shown through this representation of each of the workers' strong nimble hands.

Mocha Java, traditionally a blend of Arabian Mocha and Indonesian Java, is said to be the oldest coffee blend in history, bringing together two diverse beans in a complimentary union that facilitates highlighting each one of their unique qualities—intensity and wildness from the Mocha and clean brightness from the Java.

Beans from Yemen (a small country on the Arabian Peninsula that has been growing coffee since the 1400s) were shipped to the port of Mocha, where sailors returning from Java (Indonesia) combined the two beans in a serendipitous blend that has been a boon to caffeine-lovers ever since.

Today, not all coffee makers adhere to the original formula, but substitute other prime quality coffees from around the world, such as those grown in Ethiopia, in place of the Yemen Mocha, especially in light of the fact that political conflicts have made beans from Yemen all but impossible to come by. They have fine-tuned the mixture and proportions to make a drink that is popular and tasty in their alchemist’s quest to make the perfect Mocha Java.

Ethiopian Yirgacheffe, our Mocha component, is one the world’s premier Arabica beans. It’s sweet, spicy, fragrant, and full of flavor facilitated by its slow growth at high altitudes. Described as full-bodied, bright, and clean, it’s been said to carry undertones of wine, berries, flowers, coconut, chocolate, nuts, and citrus...an incredibly wide variety. With something for everybody, it’s a premier grade coffee all around the world.

Sumatran Java tends toward a lower brightness and acidity, and the earthy tastes (facilitated by some degree of fermentation in the processing) can allude to wild mushrooms, bell peppers, herbs, peat, and chocolate, and people have compared it’s taste to a high-end alcohol like Scotch.

The fire of Ethiopian Yirgacheffe and the earthy tones of Indonesian Java come together to create a truly memorable blend with an ancient history and global popularity. The complexity and balance of the Mocha Java makes it an excellent choice for espresso roasting, and its qualities come to the fore in a dark roast.

An interesting side note: Cafe Mocha is a drink that’s half chocolate and half coffee, served at many cafes and restaurants, and packaged and sold at many grocery stores. However, this chocolate-coffee combo bears no relation to the Mocha Java blend.

We're friends, who also happen to be industry professionals, that teamed up to create something of our own. A true expression of ourselves and our values. A brewery, business and lifestyle that we stand behind. Co-founded by Mallory Jones @mal_jones, Jessica Nettleton @nettlemonster and Justin da Silva @justindasilva, Matron is a reflection of us, it has been shaped by our collective experiences.

 

We want to make a finite amount of delicious beer that is special to its community. We're not looking to be everywhere. This is not about racing to the top, or the bottom depending on how you look at it. It is about creating a business that will sustain a quality of life for those people pouring their hearts into it -- and creating a product you can count on. 

 

We chose the name Matron because it is both strong and feminine. At the root of what this word means, we read it as someone who takes care of others, someone who is hospitable be it by trade or by character. It is for the often under-appreciated roles that these people play in making things easier and more enjoyable. We as a company aim to look after our people, our product and our patrons.

 

We're located in beautiful Bloomfield, Prince Edward County. There are a million more convenient and entirely easier settings to have chosen to build our brewery, but this wasn't about constructing a production facility. Matron aims to be a space we and our team want to create in. We aspire for you to feel the same sense of relaxation and arrival that we get to enjoy everyday.

When Mallory Jones, Jessica Nettleton and Justin da Silva landed on the name Matron for their Bloomfield, Ont.-based brewery, it checked all the boxes. “We wanted to have a strong, feminine name,” says da Silva, “It’s also a shout-out to those who look after others.”

The three friends were working in the beer industry in Kingston before quitting their jobs in 2019 to realize their wouldn’t-it-be-cool-one-day dream of building their own brewery. For years they’d witnessed the way the beer knowledge of the two women, while tremendous, was often overlooked. Now, in less than two years, Matron Fine Beer has become a going concern in the competitive local craft beer scene by focusing on fruity farmhouse ales, aromatic IPAs and lower-alcohol lagers — and on building a principled, grassroots business. “We decided from the beginning that we wanted to take care of the staff, the community, and the land that we’re on,” says da Silva.

Inspired by the days of farmhouse brewing, when the matriarch of the family brewed beer using whatever the farm could grow, the trio chose to plant Matron Fine Beer among the sprawling farms and vineyards of Prince Edward County. It counts two of its key brewing suppliers — Pleasant Valley Hops and Barn Owl Malt — among its neighbours.

 This month in our Wines of the Month Club, we feature our 2018 Pinot Noir! Long sold out at the winery, but we kept some cases back to age and are releasing some as part of this month’s selection.

A wine I’ve always loved. Bright cherries and a slight charred lemon note with aromatics of savoury herbs lifting out of the glass. It has a smooth and silky palate with a very delicate tannin structure.
