New Ciders & Ciders selling out

We released our first single variety of Kingston Black this summer. The apples are from our orchard & Kingston Black is considered the royalty of single varieties in the cider world - a perfect balance of soft tannin, acidity and sugar. Add a touch of delicate floral aroma and you have an absolutely delightful cider.

This Kingston Black has a more intense profile than others I’ve tried (from the West Coast of Canada + US), which I think must come from our orchard location - hot, dry conditions leave small fruit with very powerful flavour profiles. This is the first single variety Kingston Black that we’ve seen in Ontario & with the biennial nature of these trees, we won’t get another crop until 2023. There was only a single barrel of cider, so this super rare cider really won’t last long.

The Other One

We have a second single varietal from our orchard this year, which is also from our estate orchard. Yarlington Mill is even more intense in profile than Kingston Black, with a very clove-like aroma, which is typical for this variety.

Like the Yarlington Mill, these apples are very rare in Canada & this is the first single variety Yarlington Mill we’ve seen in Ontario. Again, the flavour profile is more intense than those I’ve tasted from the West Coast & is more similar to the UK ciders made with the same apples.

These apples are frustrating to grow, as they are extremely susceptible to a bacterial infection called fireblight. We cut out about 30-40% of our trees last year. Not sure if we will be able to repeat this single variety in the near future with what is left of the trees.

The New Nostalgia

Dawn Laing & Drew Downs took over this Prince Edward County institution in April of 2020, at the height of a global pandemic. Great time to get into a new business, right? Well, after picking up the property in the fall of 2019 there was no looking back. Dawn & Drew come to this project brimming with business, art, event and ornithology experience! The goal is to build The Mustang PEC to become a premier destination for local and visiting nostalgia hunters looking for a time they maybe didn’t even know and making new memories with people they do know. You know?

Stay tuned for updates and edits to the property as we work out operations and learn what we need, don’t need, and want. Oh the things we want……

Thank you for checking us out and hopefully you’ll have the time to take in a movie and a sunset at The Mustang PEC.

This Month’s Lineup

When thinking about ageing Orange wine there are a few things to consider: How long did the wine spend on the skins? What type of vessel did it live in? How much oxygen contact did it have? How much sulphur was added?

This month we dig into our own wines to see how they are developing and also ask industry star Anne Sperling and columnist/author Simon J. Woolf on their insights to the ageability of Orange Wines.

My Tasting Notes Now: A beautiful golden colour. Rich, yolk-heavy lemon curd with spicy rose petals and a dusty floral note on the nose. Lemon steel with delicate tannins and a mild acidity.  I recommend trying this wine chilled to put the wine into better balance.

1 x 2019 ORNG (Library Wine)

243 days on skin. Spiced orange and ginger on the nose. A strong acid backbone in this wine carry the tannins and citrus driven flavours through to the finish. Bottled unfined and unfiltered with a minute amount of sulphur added.

2021 Skin-Fermented Gewürz. (250ml Sample)

A very fresh pink-orange wine. Aromatics of rose petal, lemon and rosemary leap out of the glass. The palate is acidic with chalky tannins and a soft lemon finish. This wine is still in tank and has yet to have any added sulphur. Set to be bottled in the next week or two.

2021 ORNG (250ml Sample)

Very pale orange in colour, delicate peppery notes with just a hint of citrus. This wine is taking a rest from the big transition it just faced with its pressing. The palate is quite light in weight compared to other years, but has a very strong acid backbone. There is a lot of purity and creaminess on the mid-palate that carries the tannins through to the end. This wine needs some time to age in barrel, allowing flavours to concentrate and settle, before I bottle it.

Plus, from time-to-time we even include other hard-to-find wines we like!

Loch Mór Cider Company

Loch Mor Cider blends contain carefully selected heritage and cider varieties, which are pressed on-site and fermented slowly at low temperatures. Many of our ciders are bottle conditioned, creating a natural, fine stream of bubbles. Some are fermented naturally with wild/house culture yeast & others are inoculated with strains of wine yeast.

We like our cider full of flavour and not full of sugar. We leave our cider “full juice”, which means we can provide you with a drier (lower sugar) cider with the full flavour for you to enjoy.

Cider judges also agree – our ciders have won awards for two years in a row, including for our fortified cider, Pommeau, which has won twice. (we were the first to produce this traditional style of cider in Ontario, and we think the second in Canada).

Prince Edward County

Wine Appellations of Ontario

https://www.vqaontario.ca/Appellations/PrinceEdwardCounty

PRINCE EDWARD COUNTY APPELLATION

Officially identified in 2007 as a VQA appellation of origin, Prince Edward County is separated from the mainland by the Bay of Quinte at Belleville and is completely surrounded by the waters of Lake Ontario. The soils and microclimates of the County coupled with the all-pervading limestone base provide an ideal growing environment for cool-climate grapes such as Pinot Noir and Chardonnay. This idyllic island setting is now home to over 40 wineries, a dozen craft breweries, fine restaurants, cheese producers, farmers’ markets and other local food purveyors dotted along the natural beauty of the County trails and beaches.

Terroir

Topography

The topopraphy of Prince Edward County is irregular with deep valleys digging into the broad flat Trenton limestone that is the foundation of this appellation. A gradual rise from north-east to south-west is crossed by a number of long east-west gentle ridges and occasionally steep rugged escarpments.

On the northern and eastern shorelines high rocky bluffs rise to an elevation of a hundred feet or more while the western shore has many inlets with sandy shores and large sand bars which define bodies of water such as West Lake and East Lake.

Prince Edward County is an appellation full of mesoclimates and terroir conditions that provide the basis for the distinct in the wines that are produced here

Soil

Soils throughout this appellation are mostly reddish-brown clay loam to sandy loam that overlay a limestone bedrock embedded with shale fragments. The stony surface and numerous rock and shale fragments within the soils allow water to drain into the limestone, which ensures good drainage of winter-melt and substantial root penetration for mature vines. This rocky soil also allows good heat conduction and retention and encourages early warming in the spring.

Climate

Most vineyards in this appellation are located in areas that receive maximum benefit from lake breezes. Prevailing southwesterly breezes travel steadily across the Bay of Quinte which moderate temperatures throughout the year and are especially beneficial during the warm summer months, keeping average temperatures around 22 degrees C., with pleasant cooling during the hotter days and keeping cool nights at bay.
